This easy one-pot dinner is sure to delight you and your family this St. Patrick’s Day.

3 carrots diced
3 ribs celery
4 red potatoes
1 turnip or parsnip diced
1 can jackfruit, drained
1 yellow onion
4 cloves garlic
1/2 cup green peas
1 tablespoon no beef bouillon
3 cups water
1 cup coconut milk
1/4 cup flour
2 bay leaves
4 sprigs fresh thyme
1 tablespoon salt (black salt preferred)
Pepper to taste

Cut veggies to your liking, mix in flour into cut veggies in a casserole dish. Pour mixed bouillon and coconut milk on top of mixture. Add in salt, pepper, thyme- mix well.

Preheat oven to 350 (roast option if available). Bake or roast for 1 hour, stirring every 15-20 minutes for an even bake. Serve with your favorite dinner rolls!
