Preheat the oven to 350 degrees. Grease a 9x5x2-inch loaf pan.
Sift the flour, sugar, baking powder, baking soda and salt together in a large bowl.Cut in the coconut oil and stir until the mixture is crumbly. Combine the remaining wet ingredients and add to the dry mixture; mix until flour is moistened. Fold in the fruit.
Scoop batter into loaf pan and bake for 50 minutes or until a toothpick inserted in the middle comes out clean.
Cool completely before slicing.
