Modified Bruschetta

  • 4 Roma Tomatoes
  • Fresh Basil
  • 1/2 Red Onion
  • Rosemary
  • Lemon juice from One Lemon
  • Lemon Zest from One Lemon
  • Salt and Pepper to taste
  • Smart Balance
  • French Baguette Whole Wheat


  • Dice tomatoes into cubes and add to bowl
  • Dice half a red onion and add to bowl
  • Smash and cut garlic into small cubes then add to bowl
  • Chop basil and rosemary and add to bowl
  • Grade lemon zest over bowl
  • Slice lemon in half and juice
  • Add juice, salt and pepper to bowl
  • Cover each slice with some smart balance and cook in the pan. Turn over every 30 to 60 seconds till the color you desire and serve.
